Butter Masala Shakshuka

Cooking Time: 10 minutes
Ingredients:
2 tablespoons olive oil
1 red pepper, diced
1 cup Masala Gossip Butter Masala Sauce
Salt and pepper to taste
4 large eggs
Fresh parsley or cilantro, chopped (for garnish)
Feta cheese or crumbled goat cheese and toasted bread (optional, to serve)
Instructions:

Heat olive oil in a large skillet over medium heat.

Add the peppers and cook for 5 minutes until the peppers are softened. Season with salt and pepper.

Stir in the Masala Gossip Butter Masala sauce. Simmer the mixture for about 5 minutes until it thickens slightly.

Using a spoon, make small wells in the sauce for each egg.

Crack the eggs one at a time into the wells. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired level of doneness. Season the eggs with salt and pepper.

Once the eggs are cooked, remove the skillet from heat. Sprinkle chopped parsley or cilantro over the top.

Optionally, crumble feta cheese or goat cheese over the Shakshuka before serving.

Serve the Shakshuka hot with toasted bread or pita for dipping.
